With both the summer heat AND a new baby, I really don’t want to be slaving away over a hot stove these days. Now, more than ever, I am going for quick and easy meals that satisfy.

Because I’m breastfeeding, I am SO HUNGRY ALL THE TIME….like, it’s insane how hungry I get. I like to prep easy meals and snacks for the upcoming week over the weekend when Adam is home and can help watch Grayson while I spend a little time in the kitchen. Bless everyone that ever took a new mom dinner! There was absolutely no way I had time to cook a meal during the first two months. Heck, it’s still really hard and we’re still eating our way throughthe freezer! At one point around the 6pm fussy hour, I looked at Adam and said, “I really don’t think I’ll ever have time to cook ever again.” Well, I still don’t have time to cook like I used to but I’m getting there, slowly but surely.

For those busy evenings, whether you’re a new mom or not, this summer gazpacho is the answer.

Summery Gazpacho-9742


serves 4

Print this Recipe!


1 cucumber, sliced

1/2 small red onion, minced

1 bunch fresh parsley, chopped



juice of 1 lime

1/4 cup extra virgin olive oil

1/4 cup balsamic vinegar

2 cups tomato juice

1/4 tsp salt

1/8 tsp pepper

16 large raw shrimp, peeled and deveined


First, make the gazpacho. Combine all ingredients except for shrimp in a high speed blender or food processor. Whirl until just blended. Taste gazpacho and season with extra salt and pepper if needed. Place in the fridge while you prepare the shrimp.

For the shrimp, heat up two tsp olive oil in a large skillet over medium heat. When hot, add the shrimp and briefly saute until pink and curled. This will take only about 4 minutes since shrimp cook so fast. Sprinkle shrimp with salt and pepper and remove from heat.

To serve, ladle gazpacho into bowls and top with four sauteed shrimp.

    I am due with my first baby in October, and taking a page from your book, have been preparing freezer meals each week. I think it will be a real lifesaver! I love the idea of this gazpacho, especially during the summer! Looks delicious!

    This is 27-kinds of gorgeous, and I love the shrimp! My friend just had a baby, and I want to bring her a cool pot of this soup. Casseroles are nice (and classic), but everyone needs something a little lighter now and then!

    太漂亮了!i’m sure you’ve read it already, but the cookbook/memoir “dinner: a love story”, from the blog, is such a good reminder of the phases of life dinner goes through based on where we’re at in our own lives. the second part is all about dinner with young children and keeping a semblance of normal through it all, whatever that means for you! you’ll find your new normal again soon.

    I agree with not having anytime in the kitchen when the baby is here. I’m due with my fourth in September and I’m trying to get freezer meals ready to feed the 5 of us when he arrives. It is just so hard. After the last one, I didn’t have 2 free hands for months and months because she was a needy baby and hated the carrier. I try to give meals to people in crisis and after the baby arrives. I hope someday I’m paid back for all those meals I have prepared for others but it might not happen because it hasn’t happened yet. I want to start a movement. Stop buying the baby cute outfits when they arrive, bring the parents a casserole, soup, sandwiches or even a gift card for take out. Paper palates and plastic silverware isn’t a bad gift either. I’m glad things are starting to settle down for you. Having a kid is such a life changing experience that you can’t even wrap your head around it until it happens.

    Good to know you’ve not been able to cook the past couple months (not ‘good’ that you haven’t been up for it, I mean good as in, I’m glad I know so I can maybe somewhat be prepared for that). I’ve already stocked our freezer with what I thought was a decent amount of meals. Guess I should make a few more in the next 5 weeks.

    I hear ya on gifting families meals after a new baby arrives! Although, I wasn’t so fortunate this time around…. We’ve been relying on a lot of frozen, pre-made stuff lately as I wasn’t able to get much in the freezer before my little one came along.
    This looks like a delightful summer meal. Hopefully, I’ll be able to get it on the table one of these nights soon!

    Thanks for this recipe Jenna. God bless you and your family, I’ve been following you on instagram and I love seeing all the pics of Grayson. I loved reading your birth story, it was so honest. I think a lot of us have an idea of what our delivery will be like and then it goes completely different. My son was born early at 28 weeks in April and that definitely turned our world upside down.

    I know you’re not saying that you are, but I recall how easy it was to think your old life was “over” for who knows how long, and that it is suuuper easy to get challenged negatively by the tough times of new parenthood (esp when no one is getting great sleep all the time!!) , but you’ll survive, he will thrive, and you will be able to incorporate your old ways into your new life. Promise!!

    This gazpacho was delicious and so easy to make. We’ve been having 90+ days where I live, and this is the perfect meal for hot weather.

    I did find that a whole bunch of parsley is way too much. It turned my gazpacho brown and overpowered the tomato flavor.

      I second this comment about the parsley. Maybe I took the “bunch” too literally, but my gazpacho is definitely not red. Oops!

    I made this a few nights ago! It was really good, although I have to say that when I ate it for dinner I needed a little more substance to it. I mixed it with cous cous and it made it perfect! Thanks for the recipe
